There does definitely seem to have been a move towards fluffier and mpreg/family centric Jack/Ianto fics after CoE, and I agree it does seem to be because people want them to have a happy ending.
The downside seems to be that there's a lot less of everything else, including adventure and case type fics, and even the more kinky type of relationship fics.
I've written a variety of pairings (as well as more gen type stuff), canon (Jack/Ianto), non-canon (Ianto/Andy), and ones that are sort of canon (like Owen/Suzie - we know from what Suzie said to Gwen that she'd slept with Owen, but we never get to see their relationship on screen.)
Pairing wise I think (and I've might have missed a few) I've written: Jack/Ianto, Jack/Owen, Jack/Suzie (The Owen and Suzie ones were both pre-series), Ianto/Andy and Ianto/Owen (Both during the year that never was or while Jack was gone with the Doctor), and Ianto/Lisa. Owen/Andy (Pre-series) Owen/Tosh, Owen/Suzie (Pre-series), Owen/Diane (from Out of Time), and Gwen/Rhys.
And if I ever get round to writing it there will also be Suzie/Tosh in a different version of They Keep Killing Suzie, from Tosh's point of view, where basically the Glove was controlling Suzie to some extent, and Tosh is the one who interacts with Suzie rather than Gwen.
